Recipe For Kris' Lentil Sausage Soup

  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 stalks celery with leaves, chopped
  • 1 pound kielbasa sausage, sliced
  • 2 quarts chicken broth
  • 1 (15 ounce) can crushed tomatoes
  • 1 clove garlic, crushed
  • 1 pound dry lentils, rinsed
  • 2 bay leaves
  • salt and pepper to taste


Heat oil in a large stockpot over medium heat. Stir in the onion, carrots, and celery; cook and stir for 2 minutes. Add kielbasa, chicken broth, tomatoes, garlic, lentils, and bay leaves and bring to a boil. Reduce heat and simmer for 2 hours. Season to taste with salt and pepper.
